Carrots are perhaps best known for their rich supply of the antioxidant nutrient that was actually named for them: beta-carotene. However, these delicious root vegetables are the source not only of beta-carotene, but also of a wide variety of antioxidants and other health-supporting nutrients.
Number of servings: 1, 200 calories per serving.
- 2 large carrots
- 2 celery stalks
- 2 leaves of kale (any kind of kale will work)
- 1/2 English cucumber, peeled and roughly chopped
- 1 cup water
- Combine everything into your blender and blend (depending on your blender, celery made need to go through a juicer).
- Add more water if needed to get things moving around in the blender.
