The Hindu vegetarian tradition differs from other vegetarian diets by virtue of its integration with the 6,000 year old Ayurvedic science of healing and nourishment.
In the USA, for decades the monks at the Kauai monastery in Hawaii have enjoyed these recipes and followed the Ayurvedic food protocols outlined in their cookbook. An Ayurvedic physician who performed an annual examination for each monk (age 17 to over 70) stated that the monks are some of the healthiest people he had ever examined.
